Quality over quantity: Spanning just 3 hectares, 2 of which are covered in around 8,000 Castillo coffee trees, Finca Vista Hermosa is all about quality over quantity. The farm specialises in growing this particular variety, ensuring each harvest is well cared for.
The journey from tree to bean: Ciro and his team follow a meticulous process to bring out the best flavors in their coffee. Coffee is selectively picked--usually when they turn a deep purple. Freshly harvested cherries are depulped the same afternoon, followed by an 18-hour dry fermentation in tanks. After fermentation, the beans go through a triple wash for maximum cleanliness. They're then dried in parabolic dryers, which protect them from rain while ensuring even, consistent drying.
