José Uribe Lasso founded El Diviso in 1997 in the Normandia district, about half an hour northwest of Bruselas in Huila, and runs it with his sons Jonathan, Nestor and Adrian. It's a familiar Colombian arc — the next generation refining what came before and pushing it somewhere new.
This Bourbon Sidra is co-fermented with mossto — juice pressed from pulped coffee cherry — which is used to steep freshly picked cherry and drive the ferment. The extra sugars and microbiome push fermentation further and faster than it would go on its own, then a sequential stage carries it the rest of the way.
It's a method with real risk attached, but micromanaged closely the payoff shows up plainly in the cup.
Roasted for filter: almond and a yoghurt-like softness under cranberry and grape.
