Gathaithi Coffee Factory has served the Gathaithi Farmers' Cooperative Society since 1967, taking cherry from roughly 1,650 active smallholder members who mostly farm half-acre plots. The wet mill sits in the corridor between Mount Kenya and the Aberdare ranges, where deep red volcanic soil, cool air and about 1,100mm of rain a year slow ripening right down. Cherry is picked selectively at peak ripeness and delivered the same day, then pulped, fermented overnight, washed, soaked and dried on raised beds for one to two weeks with constant turning and hand sorting. Roasted for espresso, the classic Nyeri structure carries through as a dense, syrupy shot with raspberry and blackcurrant acidity over toffee sweetness.
