This special coffee from producer Fresy Perez comes from the region of San Andres in the South-West of Honduras. It's only the third time we've sourced coffee from this relatively youthful area, where coffee production began in the 90s. Once an unknown, San Andres is now gaining well-deserved recognition in the coffee world.
Fredy Perez and his family grow and process their coffee with focus and purpose. Their dedication results in exact, refined, and flavor-driven coffees. The cherry was rested for 24 hours before being pulped. The parchment was then dry fermented for 18 hours and washed twice with clean water. Finally, the coffee was sun-dried alfresco for 15 days. Despite being in direct sunlight, the coffee dries at a carefully controlled slow rate, thanks to the local San Andres wind, ensuring optimal conditions.
